A longtime staple of our early coffee program, Chiapas is back at French Truck!
Produced by the GRAPOS Cooperative near the breathtaking El Triunfo Biosphere Reserve, this Fair Trade Organic coffee showcases everything we love about great Mexican coffee: pecan, fresh apple, almond, and a touch of Kahlúa sweetness, wrapped in bright acidity and a smooth, candy-like finish. The resulting cup has a balance that is both comforting and complex.
This year's crop is one of the best we've tasted in years, and we're excited to bring it back to the menu.

When we started the company, if you place your order by 10 am, it was roasted that day and shipped to you. We still adhere to those foundational principles today, and all orders are roasted to order. Anything placed before 8am will roast and ship that day. Anything after 8 am will be roasted and shipped the next day.
We choose beans from farmers and cooperatives who share our commitment to sustainability, quality, and ethical practices. The countries of origin are listed on each of the coffee descriptions.
