Luis Calderón is a third-generation farmer and a pioneer in cultivating exotic varietals like Pink Bourbon, Geisha, and Maragogype—many of which we’ve proudly featured before. His meticulous 30-hour underwater fermentation, followed by a fully washed and carefully controlled drying process, brings out crystalline clarity and a refined, elegant body. The result is a coffee that’s both approachable and deeply complex.

When we started the company, if you place your order by 10 am, it was roasted that day and shipped to you. We still adhere to those foundational principles today, and all orders are roasted to order. Anything placed before 8am will roast and ship that day. Anything after 8 am will be roasted and shipped the next day.
